I’m Jay, the chef and founder behind Toro Tapas, and my love for Spanish cuisine runs deep. My journey started in some of the busiest, most demanding kitchens in London, where I honed my skills and developed a real passion for bold, vibrant flavours. But it was when I travelled to Spain that everything changed - I fell head over heels for the energy, the soul, and the pure social magic of traditional tapas bars. The way people gathered, lingered over small plates, and turned eating into a celebration of life.
Back in the UK, I brought that inspiration home and spent nearly a decade as Head Chef at The Bank at Bude, a beloved spot blending Cornish and Spanish influences. Those years were incredibly rewarding, we earned multiple awards and proudly secured a place in OpenTable’s Top 100 Restaurants in the UK. Every service taught me more about what makes dining truly special: fresh ingredients, heartfelt hospitality, and creating moments that people remember.
That experience lit the spark for Toro Tapas. I wanted to build a place of my own in the heart of Bude - somewhere that captures the authentic spirit of Spain while celebrating the incredible produce and charm of North Cornwall. Every dish we serve tells a story: classic Spanish recipes made with care and creativity, elevated by the best local Cornish ingredients whenever possible. From smoky patatas bravas to tender slow-cooked meats, fresh seafood, vibrant vegetarian options, and our signature sharing plates, everything is prepared with passion and precision.
